When the husband-and-wife team behind Ricky & Maria Pizza and Pasta opened their take-out restaurant at 6613 Ridge Avenue, they were not newcomers to the Roxborough community.

For over 20 years, both worked at the much-loved Maria's Ristorante (no relation). Ricky was head chef and Maria worked as a server.

Before that, they worked at La Collina in Belmont Hills. "That's where we first met in 1996," said Maria. "My mother was a baker, and I met the perfect man who cooks!"

"Ricky had told customers for years that someday he would open his own place and they encouraged him to remain in Roxborough," said Maria. That someday came on June 10th. "Business has been good even though we don't have a website yet," said Ricky.

Do not mistake their take-out status for fast food. Ricky is bringing all his treasured homemade Italian specialties with him, from appetizers to entrees. Lobster & shrimp fettucine, linguini with clams, vegetarian and traditional lasagna, homemade ravioli, and homemade gnocchi are all on the menu. Plus, he’s offering crowd- pleaser sandwiches – roast pork, eggplant parmesan, chicken parmesan, and cheesesteaks.

But it's Ricky’s pizzas that really take center stage. "The most popular are my margherita pizza and meat lover’s pizza, which contains ham, sausage, steak, bacon, ground beef and pepperoni," said Ricky. Just don't tell your cardiologist!

Ricky & Maria Pizza and Pasta also offers catering. Need lasagna for sixty people? No problem. It will be ready for pickup.

This is a family affair. Maria takes the orders and manages payments. Ricky supervises in the kitchen with assistance from their son Mark and another family member Eddie. What's it like to work with her spouse every day? Maria has no complaints. "We always worked in the same places and, when we raised our kids, we did everything together from cooking meals to doing laundry," she said.

Initially, Maria and Ricky wanted to open a sit-down restaurant, but they could not find a location that fit their budget. “That is still our plan for the future,” said Maria. Meanwhile, their current location will be a boon to a block where over four hundred apartments have just been built or are under construction.
